This recipe is an absolute favorite, and I get requests for it all of the time. This recipe takes about 15 minutes to whip together, and another 16 minutes to bake (8 minutes per sheet). It makes about 3 dozen amazing Peanut Butter Cup Cookies. Enjoy!
Ingredients:
- 1 3/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1/2 cup butter, softened
- 1/2 cup granulated sugar
- 1/2 cup smooth peanut butter (I use Jif or Skippy)
- 1/2 cup packed brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 36 miniature Reese’s peanut butter cups, unwrapped
Making and Baking the Peanut Butter Cup Cookies:
- First preheat the oven to 375 degrees.
- Whisk the flour, baking powder and salt together in one mixing bowl.
- In the other mixing bowl, beat the sugar, peanut butter, brown sugar and the butter together for 2-3 minutes.
- Beat the egg, then mix the egg and the vanilla into the sugar/butter/peanut butter mixture until combined.
- Slowly mix in the flour, and mix until combined completely.
- Roll the dough into golf sized balls, and place in a greased mini-muffin pan (I like the baking spray).
- Bake them for about 8 minutes, one sheet at a time.
- Remove from oven and immediately press a mini peanut butter cup into each ball.
- Let these cool in the pan for about a few minutes, and then pop the pan in the refrigerator so the candy will cool and harden.
If you are in a rush and you want the cookies fast, just go out and get the pre-made peanut butter cookie dough instead of making it from scratch. I promise I won’t tell, and neither will Santa (as long as you leave him a couple!)
